The CommonSenseMom's Big Batch Famous Pancakes Recipe

3 eggs, separated
2 c. milk (I use 2%)
1/4 c. olive oil
1/4 c. canola oil
1 c. all purpose flour
1 1/4 c. white whole wheat flour
1 T. + 1 t. baking powder
1/2 t. salt

In small bowl, beat egg whites until stiff.  In separate bowl, combine the egg yolks, milk, and oils.  Beat on high until well mixed and frothy (a minute or two).  Add flours, baking powder, and salt.  Mix on low until combined, scrape bowl, then beat on high for about 30 seconds.  Fold in beaten egg whites.  Cook on medium-hot, buttered griddle.  Makes about 20 4-5 inch pancakes.

Refrigerate any leftover pancakes.  Re-heat in toaster.
